Easy 30 Minute BBQ Chicken Pizza (no yeast required!)

This 30 Minute BBQ Chicken Pizza is so easy to make and insanely delicious. The dough requires no yeast and is topped with fresh spinach, mozzarella, BBQ chicken, red onions, turkey bacon, and cilantro. Oh, and don't forget the garlic crust!

Ingredients

For the Dough

  • 1 C whole wheat flour* (plus more for kneading)
  • 1 C nonfat plain greek yogurt
  • 1¼ tsp baking powder
  • ¼ tsp salt

For the Pizza

  • 1 lb. cooked chicken (cubed or shredded)
  • ⅓ C Stubb's BBQ Sauce, divided
  • 1 C spinach
  • 1 C low fat mozzarella cheese, divided
  • ¼ red onion, diced
  • ¼ tsp red chili flakes (optional)
  • 1 tsp garlic salt
  • 2 slices Jennie-O turkey bacon
  • ¼ C chopped cilantro

Instructions

For the Dough

  1. Preheat the oven to 450°F and line a pizza pan** with parchment paper.
  2. In a medium sized bowl, whisk together the flour, baking powder, and salt until well combined.
  3. Create a well in the center of the bowl and add in the greek yogurt.
  4. Gently fold the yogurt into the flour mixture until a crumbly dough forms. The dough will be "wet" and slightly sticky, and there will be some flour that doesn't completely incorporate in the bowl - that's ok! Once most of the dough has combined, knead together by hand on a well floured surface until it comes together completely. Add 1 tablespoon of additional flour to the dough at a time until the dough is no longer sticky or wet to the touch.
  5. Flour a rolling pin and sprinkle a touch more flour over the ball of dough. Roll dough into a 12" circle, then use your hands to roll up the edges of the pizza into a "crust" (see photo for reference). You should be left with a pizza approximately 11" in diameter. Transfer the pizza to the prepared parchment paper.

For the Pizza

  1. Toss the cooked chicken in 3 tablespoons of BBQ sauce.
  2. To build your pizza, first spread out the spinach in an even layer over the pizza dough. (Yes, you read that right, no sauce on the bottom!) Sprinkle ¾ C of the mozzarella cheese on top of the spinach, then all the chicken and red onions over the cheese. Add the remaining cheese and red chili flakes on top.
  3. Spray the rolled crust with cooking spray, then sprinkle the garlic salt over the crust. Don't feel obligated to use the entire teaspoon! Season according to taste.
  4. Your pizza is ready! Bake in the oven for 15-17 minutes or until the pizza reaches desired doneness. If you like a softer crust, remove at 15 minutes; if you like a more crispy crust, remove at 17 minutes.
  5. While the pizza is cooking, prepare the bacon according to package instructions. Dice into small pieces.
  6. When the pizza is done, drizzle the remaining BBQ sauce on top and garnish with cooked bacon and chopped cilantro. Slice into 8 pieces and DEVOUR!

Notes

*For gluten-free diets, you can use an equal amount of gluten-free all-purpose flour.

**If you have a pizza stone or a 12" cast iron skillet, you don't need parchment paper.
