Instant Pot Sweet Chili Lime Pulled Pork Tacos

These Sweet Chili Lime Pulled Pork Tacos are made in the Instant Pot and served with a Peach Mango Salsa. They're so easy to make, so delicious, and naturally gluten free and dairy free. The whole family will love them!

Ingredients

Sweet Chili Lime Pulled Pork Tacos

  • 2 lb lean pork tenderloin
  • ½ red onion (sliced)
  • 1 C low-sodium chicken broth
  • ¼ C lime juice
  • 3 Tbsp honey*
  • 3 cloves garlic (minced)
  • ⅓ C chopped cilantro
  • ¼ C chili powder
  • 1 Tbsp oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 12 corn tortillas**
  • 2 limes (cut into wedges)
  • Peach Mango Salsa (see below)

Peach Mango Salsa

  • 4 peaches
  • 2 mangos
  • 2  roma tomatoes
  • ½ red onion
  • 2-4 Tbsp lime juice
  • ¼ C chopped cilantro
  • Salt (to taste)

Instructions

For the Pork

  1. Trim any excess fat off the pork tenderloin. Place pork in the bottom of the Instant Pot and spread the sliced red onions in an even layer on top.
  2. In a large glass measuring cup, whisk together the chicken broth, lime juice, honey, garlic, cilantro, chili powder, oregano, salt, and pepper until well combined. Pour over the pork and onions in the Instant Pot, making sure some of the juices get underneath the meat.
  3. Seal the lid and the valve of the Instant Pot. Cook on HIGH pressure for 25 minutes.*** Allow for 10 minutes of natural release (the clock should say L:10) then manually release the remaining pressure. Remove the pork from the pot and shred with two forks. Add shredded meat back into the pot with the marinade and mix well.
  4. Serve warm in charred corn tortillas with Peach Mango Salsa and lime wedges.

For the Peach Mango Salsa

  1. Dice peaches, mangos, tomatoes, and red onion into similar sized pieces.
  2. Toss with lime juice, cilantro, and salt. Add more seasonings to taste.
  3. Spoon 2 tablespoons on each taco for serving.

Notes

* If you want more of a sweet flavor than a chili or lime flavor, I recommend increasing to 4 tablespoons (1/4 cup) of honey.

** Flour tortillas will also work. If serving tacos as burritos, reduce the total amount of servings by half.

*** Allow for 15 minutes of pressurization, 25 minutes of cooking, and 10 minutes depressurization. Total time is about 50 minutes.
