The Best Sheet Pan Sausage and Veggies

Ingredients

  • 14 oz. turkey kielbasa sausage
  • 1 lb. red potatoes
  • 1½ lb. broccoli
  • ½ yellow onion
  • 2 Tbsp olive oil
  • 1 Tbsp oregano
  • ½ Tbsp garlic powder
  • 1 tsp salt (to taste)
  • ½ tsp red chili flakes (optional)

Instructions

  1. Preheat the oven to 400°F and spray a baking sheet with cooking spray.
  2. Chop the red potatoes into 1/2" cubes. Once the potatoes are finished, chop the sausage, broccoli florets, and onion into similar-sized pieces for reference. For a trick on chopping onions without shedding a tear, click here.
  3. Toss all ingredients in the olive oil and spices until well coated. Spread in an even layer on the baking sheet and roast for 30 minutes.
  4. Give the finished sheet pan sausage and veggies a quick toss before serving to unstick and evenly season the food. Serve as is or with your favorite grain, like brown rice or quinoa. Enjoy!
