  • Vegan butter: my go-to brand is Miyoko's because their butter is made from organic coconut oil and organic cashew milk, and it tastes and baked just like real butter. I also use Country Crock because it's made with olive oil or avocado oil.
  • Fresh garlic cloves: I'm sorry but garlic powder won't cut it here. You can't get that garlicky goodness from a dried powder. This butter is worth peeling the garlic skin and getting your fingers all sticky! You can also use a garlic presser if you have one.
  • Fresh parsley: because herbs not only elevate the flavor but the aesthetics too. And yes, it MUST be fresh!
  • Nutritional yeast: basically a vegan parmesan cheese. I use this nutritional yeast but you can use any brand you like.
  • Seasonings: sea salt and a bit of "everything seasoning." You could also add a pinch of red pepper flakes for a spicy kick!

How to make vegan herb butter

Step 1: soften your butter

This step is crucial! Your butter MUST BE room temperature. Not softened in the microwave, not partially melted, room temperature.

For the best results, set out your butter in the morning and it will be the perfect consistency by the afternoon.

At minimum, your butter should have been on the counter for at least 1-2 hours.

Step 2: prepare the mix-ins

Finely chop your fresh parsley (or herbs of choice) into small pieces and discard the stems.

Mince each clove of garlic and set aside.

Step 3: make the garlic butter spread

In a small bowl, combine the herbs, nutritional yeast, minced garlic, and seasonings with the softened vegan butter.

Mash with a fork until everything is well combined.

Serve with the perfect side dish or a slice of bread and enjoy!

Preheat the oven to 450°F, set out a baking sheet lined with aluminum foil, and slice a large loaf of Italian bread in half like you're going to make a sandwich.

Once your garlic butter mixture is prepared, spread half of the softened butter on one half of the bread, then repeat with the remaining butter and bread.

Bake for 7-10 minutes until the butter is melted and the bread is a nice golden brown.

Sprinkle some extra parsley, salt, and black pepper on top and dig in!
