Easy Homemade Birthday Cake Ice Cream Sandwiches

These homemade Birthday Cake Ice Cream Sandwiches are made with birthday cake protein ice cream and homemade funfetti cookies. They are so easy to make and the perfect summer treat!

Normally this section of my blog posts is about 100 words, give or take. I go over all the unique ingredients, why I chose them, where you can find them, and if you can make substitutions. Not today my friends!

Today's recipe is quite simple - there's only two main ingredients standing in between you and your new favorite homemade treat!

How to Make Homemade Ice Cream Sandwiches

It all starts with the perfect cookie. And may I just say, these Funfetti Cookies are my best cookies to date! They're a magical adaption from my soft and chewy chocolate chip cookies, made with rainbow sprinkles, white chocolate chips, and a generous teaspoon of almond extract to really boost that "cake batter" flavor.

One of the reasons I love these Birthday Cake Ice Cream Sandwiches is because they're so simple to make! Just like every other basic chocolate chip cookie recipe, cream the wet ingredients, mix in the dry ingredients, shape into cookie dough balls, and bake.

Once the cookies are cooled, all that's left is preparing the ice cream. Don't worry, we're not making homemade ice cream today, that's an adventure for another day. This recipe calls for only the best ice cream: Halo Top Protein Ice Cream!

Not only is their ice cream about 350 calories per pint, but it's the perfect diameter for the size of cookies you prepared. Simply open the pint of ice cream and use a large, sharpened chef's knife to loosen the ice cream off the sides of the container. Slowly squeeze the block of ice cream out until you have about 1" of ice cream showing. Use the chef's knife to slice the ice cream. Repeat two more times to get a total of three "ice cream sandwiches." You'll need two pints of Halo Top Birthday Cake Ice Cream for this recipe, for a total of 6 ice cream rounds.

Take two cooled funfetti cookies and press an ice cream round between the two bottoms of the cookies. Note: I've found that slightly twisting back and forth as you press helps the ice cream stick to the cookie better and also creates a more even ice cream sandwich. Wrap your Birthday Cake Ice Cream Sandwich in tin foil and freeze for at least 20 minutes before eating.

Common Questions About Homemade Ice Cream Sandwiches

Can these Birthday Cake Ice Cream Sandwiches be made gluten-free or dairy-free? Probably, but you'd have to switch out so many of the ingredients that you might as well find another recipe. However, I did include some suggestions for these substitutions in my original cookie blog post. If you don't require either of these adaptations, this is the only ice cream sandwich recipe you'll need!

Can I use another brand of ice cream? Of course! I chose Halo Top (not sponsored) because I wanted to make sure there was a source of protein in these birthday cake ice cream sandwiches to balance out the carbs and fat, but any birthday cake ice cream you choose will work. Just make sure you can slice the ice cream into the right size!

How long can I store my homemade ice cream sandwiches in the freezer? I recommend storing these treats no longer than one month in the freezer. I doubt they'll last that long though!

Can I eat my birthday cake ice cream sandwiches right away? If you have a strong jaw, totally.  My husband has no patience, but I prefer them a little softer. I usually pull them out of the freezer 10 minutes before I'm ready to enjoy!

Ingredients

  • 12 Funfetti Cookies (baked and cooled)
  • 2 pints Halo Top Birthday Cake Ice Cream

Instructions

  1. Open a pint of ice cream. Using a large chef's knife, run the blade along the inside of the container between the cardboard and the ice cream to loosen the ice cream. You should be able to tip the container upside down and watch the ice cream slide out.
  2. Slide ⅓ of the ice cream (about 1" in thickness) out of the container and rest it sideways on a cutting board. Carefully slice the ice cream into a round. Sandwich this ice cream round between the bottoms of two funfetti cookies, twisting slightly to adhere. Wrap the ice cream sandwich in foil and freeze for at least 20 minutes. Repeat with remaining ice cream and cookies until you have 6 Birthday Cake Ice Cream Sandwiches.
  3. Let the ice cream sandwich(es) thaw at room temperature 10 minutes before serving. Store in the freezer for up to one month.
