Easy 5 Minute Buffalo Chicken Wraps

Spicy shaved buffalo chicken is layered with fresh leafy greens, broccoli slaw, and bleu cheese crumbles, then wrapped in a low-carb tortilla. These easy Buffalo Chicken Wraps come together in 5 minutes for an easy meal prep recipe or a quick lunch.

Here in Provo, Utah, the local grocery store is an affiliate of Kroger called Smith’s. No matter how well I plan my week, I still end up going to the grocery store at least three times, so I’ve practically memorized Smith’s aisles, products, and prices (it’s kind of scary!). They supply a package of Beef Shaved Steak that I use for my Philly Cheesesteak Skillet dinner and the occasional stir fry.

One day, I saw a variation of it labeled as “Buffalo Shaved Chicken” and I knew I needed to write a recipe with it! I finally snagged a package on sale with a coupon and got to work. The final result is incredibly delicious and easy to make: Buffalo Chicken Wraps!

What's Inside Buffalo Chicken Wraps

Imagine you’ve ordered buffalo chicken wings at a sit-down restaurant. You’d expect messy and spicy chicken with a side of crunchy veggies (ie carrots and celery) with either ranch or bleu cheese for a dipping sauce. Well, these wraps mimic that tasty meal quite well with a few changes. You’ll need:

  • Shredded chicken: since not everyone has a Kroger grocery store nearby, I’ve written this recipe with regular shredded chicken. Feel free to prepare your own or buy a rotisserie chicken!
  • Spicy buffalo sauce: if you don’t love spicy, I’ll forgive you. Grab a brand you love, and if you’re sensitive to soy, make sure to find one that is soy-free!
  • Bolthouse Farms Chunky Bleu Cheese Dressing: I absolutely LOVE this brand because they create your favorite classic salad dressings with much healthier ingredients and 70% less calories than the original recipe (not sponsored, I just love them!).

  • Mixed greens of choice: adding some dark leafy greens not only adds some bulk to these wraps but a dose of vitamin K and some great vitamins. I personally love a spinach/arugula mix.
  • Broccoli slaw: mimics the carrot and celery sticks without sacrificing the texture, vitamins, or flavor! It also saves prep time. If your local store doesn’t carry broccoli slaw, regular coleslaw (without dressing) will work just as well.
  • Bleu cheese crumbles: adds healthy fats and compliments the bleu cheese dressing. Feta cheese also works here.
  • Xtreme Wellness High Fiber [Spinach] Tortillas: my absolute go-to brand for all my wraps. They are only 50 calories each with tons of fiber and whole grain goodness! Any flavor will work.
  • Fresh parsley and lemon: for optional garnish!

How to Assemble your Buffalo Chicken Wrap

I worked at Taco Bell for 3 years in high school, so I’m proud to say I’ve mastered the art of wrapping things in tortillas. Here are some helpful tips that will make your wraps look amazing every time:

  1. Arrange your toppings in a thick line with an inch of space on both ends
  2. Spread your dressing on the tortilla first so you get creamy goodness in every bite without making a mess
  3. Build your wrap like you would a salad: lettuce, veggies, meat, smaller ingredients, and then toppings
  4. If you’d like to close both ends of your wrap, fold the bottom long end over your line of food and tuck it under the food, then fold both short sides over, then roll the wrap closed.
  5. Cut in half if desired. You can also wrap in plastic wrap if you’re eating on-the-go!

I love this recipe because it’s so easy to customize and make it exactly how you want it, even if you follow a certain diet! Here are some yummy variations to try:

  • Swap the bleu cheese dressing and crumbles for this amazing feta dressing and feta cheese crumbles (my personal favorite!)
  • Don’t like shredded chicken? Try diced chicken, chicken strips, or a very thin chicken breast (think Subway)!
  • If you have a Kroger grocery store (or affiliate) in town, make sure to try their Shaved Buffalo Chicken!
  • For gluten-free diets: skip the tortilla and turn these wraps into a big salad! Make your your buffalo sauce is gluten-free and soy-free like this delicious brand
  • For dairy-free diets: sub in your favorite dairy-free ranch dressing and crumbled “cheese”

Ingredients

  • ⅔ C shredded chicken
  • 2 Tbsp buffalo sauce (gluten-free if necessary)
  • 4 Tbsp Bolthouse Farms Chunky Bleu Cheese Dressing (or Ranch dressing)
  • ½ C packed mixed greens
  • ½ C broccoli slaw
  • 2 Tbsp bleu cheese crumbles (or feta cheese)
  • 2 Xtreme Wellness High Fiber Tortillas (I used spinach)
  • 1 Tbsp dried parsley (for garnish)

Instructions

  1. Toss the shredded chicken with the buffalo sauce. Season with salt and pepper to taste.
  2. Divide all ingredients, including buffalo chicken, into two portions.
  3. Spread bleu cheese dressing over the tortilla. Layer mixed greens, broccoli slaw, buffalo chicken, bleu cheese crumbles, and parsley, in order, then wrap tightly. Cut in half if desired.

Notes

I used Kroger shaved buffalo chicken for this recipe, so if you can find that, it will save you a step!
