Do you ever get cravings for your favorite dessert? Like, randomly? Ok it's not just me. But seriously though, my sweet cravings hit at the most inconvenient times! Heaven knows I don't have energy to whip up a batch of cookies or a pan of brownies with a five-month-old baby.

That's why I developed today's recipe for Edible Brownie Batter! It's everything you know and love about unbaked brownies, but gluten-free, refined sugar-free, vegan, and packed with protein!

And, the best part? It's flourless too! Heaven knows we don't have time to heat treat our flour, either. Basically it's the best solution for your sweet tooth and you're gonna want to triple the recipe for extra snacking later!

Ingredients for healthy brownie batter

  • Creamy cashew butter: I chose cashew butter because it's the most mild of all the nut butters and it won't overpower the chocolate flavor. It helps bind all the ingredients together! Make sure you get an all-natural creamy cashew butter that's very drippy. If you can't find cashew butter, I would use equal amounts of tahini.
  • Sugar-free maple syrup: to sweeten the batter and add some volume without the calories
  • Unsweetened almond milk: to keep this edible brownie batter dairy-free and low in calories. I use the vanilla kind, but you can use any dairy-free milk you love!
  • Cocoa powder: our "flour" for this brownie batter that also adds a richer chocolate flavor. If you can, make sure to sift it in so there's no clumps.
  • Chocolate protein powder: the secret ingredient to make this healthy brownie batter packed with protein and nice and thick. You can use any brand you like, including vegan protein powder, but make sure the measurement is the same. This is my favorite brand.

How to make edible brownie batter for one

Like I mentioned, this is a 5 ingredient recipe, so it's quite simple. But! There are some tips that will make your brownie that much better:

  1. Whisk the wet ingredients well: the cashew butter, milk, and sugar-free maple syrup all have different viscosities, so you need to mix thoroughly so they all combine into one smooth liquid.
  2. Sift in the cocoa powder: I know this seems a little "extra" because this recipe is so simple, but it really does make all the difference if you're making a big batch of brownie batter! (I usually make 3 or 4 servings at once and keep leftovers in the fridge.) I have a little mini sieve that's only three inches wide and it's perfect for recipes like this. If you don't want to sift in the cocoa powder, make sure you stir very well so there are no lumps. It's a very sad thing to take a bite into the rich edible brownie batter only to get a clump of bitter cocoa powder.
  3. Fold the protein powder in portions: I made a huge mess the first time I made a big batch of this recipe! If you double or triple the recipe, there's a lot of protein powder and it takes a minute to mix together, so I recommend adding it a bit at a time to make sure everything mixes together well. If you are only making one serving, stir in half the protein powder until smooth, then stir in the other half.

Customize your edible brownie batter recipe!

Another reason I love my healthy edible brownie batter recipe is because it's so easy to change the flavor and mix-ins! Here are some fun ways to customize your treat:

Mint Chocolate: this one is my favorite! Add 1/8 teaspoon mint extract to the batter, then mix in one tablespoon Lily's mint chocolate chips.

Chocolate Peppermint: add 1/8 teaspoon peppermint extract and top with crushed candy canes.

Reece's PB Cup: use peanut butter instead of cashew butter. You could top with chocolate chips, Reece's baking chips, or one chopped Reece's peanut butter cup.

Chocolate Covered Almond: swap the cashew butter for very creamy almond butter (the kind with the oil separation) and add sliced almonds on top.

Chocolate Covered Strawberry: add diced strawberries on top.

Ingredients

  • 1 Tbsp creamy cashew butter (or nut butter of choice)
  • 1 Tbsp sugar-free maple syrup
  • 1 Tbsp unsweetened almond milk
  • ½ Tbsp cocoa powder
  • ¼ C chocolate protein powder (vegan if necessary)

Instructions

  1. In a large bowl, whisk together the cashew butter, maple syrup, and almond milk until smooth.
  2. Add the cocoa powder and whisk until smooth and no clumps remain.
  3. Gently fold in the protein powder with a spatula until well combined. Batter should be very thick.
