Easy Fluffy Chocolate Chip Pancakes (in the blender!)

These fluffy homemade Chocolate Chip Pancakes taste just like buttermilk pancakes but they're naturally gluten-free, easily dairy-free, and have over 15g of protein per serving. They're easy to make because they're made entirely in the blender!

I'm obsessed with breakfast. Like, it's my favorite meal of the day and my favorite food group. Most mornings I opt for a sweet breakfast like a hot crispy waffle or a really fruity smoothie (this one is my favorite!), but every once in a while I crave a savory breakfast like my Ultimate Breakfast Burritos too.

I will say, though, out of all the breakfast recipes out there, I love a good stack of pancakes. They are SO easy to make, the flavor combinations are endless, and they're awesome for meal prep!

One day during the last few weeks of my first pregnancy, I was craving pancakes at, like, 11 o'clock at night. But not just any pancakes; I wanted chocolate chip pancakes. I realized right then that I had never considered making my own version of the classic chocolate chip pancake and I got to work. For once, a pregnancy craving actually had some good benefits!

This recipe for homemade chocolate chip pancakes is literally THE BEST. They taste just like the classic buttermilk pancake but they don't use any instant pancake mix, they're naturally gluten-free, they're made in the blender, and they're packed with protein! One batch also makes a whopping 15 pancakes, so you're right on track for a delicious breakfast for the next few days!

Ingredients for Blender Chocolate Chip Pancakes

  • Rolled oats: my favorite way to make traditional recipes gluten-free. Yes, it would be easier to just use gluten-free all-purpose flour, but there are so many more nutrients in oats like whole grains, soluble fiber, and plant-based protein.
  • Greek yogurt: nonfat vanilla, to be exact. This brand is my go-to (not sponsored) because they don't use any artificial flavorings or sweetners, but you can use any greek yogurt you like, even a non-dairy yogurt!
  • Unsweetened applesauce: a fiber-friendly fruit substitute for oil. It also helps these gluten-free chocolate chip pancakes rise nice and tall!
  • Egg and egg whites: using a mix of both ensures the pancakes are fluffy and packed with lots of protein! I just use liquid egg whites from a carton instead of separating the yolk from the white. A lot of my recipes call for egg whites, so I'd get a big carton!
  • Cashew butter: to thicken the batter and opt for a healthier type of butter. It's also much more mild in flavor than peanut or almond, but you can use whatever you have on hand!
  • Unsweetened almond milk: to keep the calorie and fat content lower without sacrificing flavor or texture. Feel free to use whatever milk you have on hand, though!
  • Sugar-free dark chocolate chips: the joy without the added sugar. I love this brand and this brand!

How to Make the Best Fluffy Chocolate Chip Pancakes

If you're on the fence about these homemade chocolate chip pancakes, let me remind you that the batter is made in the blender. That's right, just throw everything in and 30 seconds later, you're ready to go! No extra mixing bowls or anything.

Now, because this recipe requires baking powder to rise the pancakes, that means the batter needs to sit for a second. Baking powder is a double-acting leavening agent that reacts with liquid first (like when you combine the wet and dry ingredients) and it also activates with heat (when you actually cook the pancakes).

Don't worry, this recipe is still easy and fast! I found that the perfect amount of wait time for the batter is however long it takes for your stovetop or griddle to heat to medium heat. Simply add all your ingredients to the blender and turn on your griddle once you're done blending.

From there, the batter is pourable, so you can either pour the batter into a 1/4 cup measuring cup or dip the measuring cup in the blender. See? Easy!

Ingredients

  • 1½ C oats
  • 1 Tbsp baking powder
  • ½ C nonfat vanilla greek yogurt
  • ¼ C unsweetened applesauce
  • ½ C liquid egg whites
  • 1 large egg
  • 1 Tbsp cashew butter (or nut butter of choice)
  • ⅓ C unsweetened vanilla almond milk
  • 1 oz Lily's Dark Chocolate Chips

Instructions

  1. Add all ingredients except the chocolate chips to a blender. Blend until smooth. Let sit while you heat your appliance.
  2. Heat a skillet or griddle to medium heat and spray with cooking spray. Pour the pancake batter into ¼ cup measuring cup, then pour onto the griddle. Drop in the chocolate chips. Cook until the edges have set and the tops start to bubble, about 2-3 minutes. Flip and cook an additional 1 minute. Repeat until the batter is finished.
  3. Serve with sugar-free maple syrup and toppings of choice. Enjoy!
