Easy Instant Pot Sweet Chili Lime Pulled Pork Tacos

These Sweet Chili Lime Pulled Pork Tacos are made in the Instant Pot and served with a Peach Mango Salsa. They're so easy to make, so delicious, and naturally gluten free and dairy free. The whole family will love them!

Usually there’s a short and fun backstory to my new recipes, but I’ve had this one on my “to-blog” list for so long I actually forgot how I came up with it…and how I made it too…whoops.

Ingredients for Sweet Chili Lime Pulled Pork Tacos

I’m sure you’ve seen Sheet Pan Chicken Tacos or some flavorful steak tacos recipe, but these babies are PORK tacos. That’s right! Juicy and tender pulled pork is the star of the show tonight and you’ll wish it was your protein every night. Why? The marinade for these tacos is incredible. You’ll need:

  • Pork tenderloin: obvi. These ARE pork tacos, right? I suggest buying a leaner tenderloin so you get more protein than saturated fat from the meat. There’s going to be so much flavor in the marinade you won’t even notice!
  • Red onion: adds texture to the pork and rounds out the sweet, spicy, and citrus-y flavor from the marinade
  • Chicken broth: the base of the marinade. Make sure to buy the lower sodium can!
  • Lime juice: classic Mexican flavor that pairs beautifully with both honey and ground chilis
  • Raw honey: adds a touch of sweetness to the tacos with a lower glycemic index than brown sugar (win-win!)
  • Minced garlic: because garlic is a must in my kitchen!
  • Chili powder: an entire 4 tablespoons is just what this recipe needs! Don’t worry, this sounds (and looks) like a lot, but with all the other marinade ingredients AND the homemade salsa, it won’t be overpowering.
  • Fresh cilantro: you’ll need an entire bunch! This recipe uses chopped cilantro for the marinade, the salsa, and the garnish.
  • Corn tortillas: gluten-free-friendly tortillas with a higher fiber and lower fat content than flour tortillas. If that’s not your cup of tea, feel free to swap in small flour tortillas!

How to Make Show-Stopping Pulled Pork Tacos

I LOVE this recipe because it is perfect for busy weeknights and lazy weekends. All you need is a glass measuring cup, your Instant Pot, and a large bowl for the homemade salsa! You can have dinner on the table in under an hour with these simple steps:

(1) Make the marinade: in your glass measuring cup, whisk together chicken broth, lime juice, honey, minced garlic, chili powder, oregano, salt, pepper, and chopped cilantro until well combined.

(2) Prep the Instant Pot: place your pork on the bottom of the pot and spread the onions in an even layer on top. Finally, pour the marinade over the meat and onions.

(3) Seal, set, and walk away: seal the lid and the valve, set to HIGH pressure for 25 minutes, and walk away! That’s it! Once the pork is finished, simply release the pressure, shred with two forks, and mix back into the marinade.

(4) Make the Peach Mango Salsa (optional): highly recommend this step. The fresh fruit and potent onions tossed in fresh lime juice is an unreal combo, especially over the juicy pulled pork.

(5) Devour: the best part, right? Char your corn tortillas over the stovetop, then layer in the pulled pork, fresh salsa, extra cilantro, and freshly squeezed lime juice inside and DEVOUR!

What to Serve With Pulled Pork Tacos

Make These Pulled Pork Tacos Your Own!

  • Intensify the sweet chili lime flavor by marinating your meat in the juices for up to 48 hours in the fridge before adding it to the Instant Pot! My mouth is already watering.
  • Add extra toppings like light sour cream (or greek yogurt), cheese, guacamole, or your favorite salsa
  • Skip the street tacos and go for the big burrito! Wrap your juicy, tender, pulled pork in a large tortilla for a heartier meal.
  • Need to make these ahead of time? Follow the marinade steps then cook in a slow cooker on low for 6-7 hours or high for 3-4 hours and enjoy later!

Ingredients

Sweet Chili Lime Pulled Pork Tacos

  • 2 lb lean pork tenderloin
  • ½ red onion (sliced)
  • 1 C low-sodium chicken broth
  • ¼ C lime juice
  • 3 Tbsp honey*
  • 3 cloves garlic (minced)
  • ⅓ C chopped cilantro
  • ¼ C chili powder
  • 1 Tbsp oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 12 corn tortillas**
  • 2 limes (cut into wedges)
  • Peach Mango Salsa (see below)

Peach Mango Salsa

  • 4 peaches
  • 2 mangos
  • 2  roma tomatoes
  • ½ red onion
  • 2-4 Tbsp lime juice
  • ¼ C chopped cilantro
  • Salt (to taste)

Instructions

For the Pork

  1. Trim any excess fat off the pork tenderloin. Place pork in the bottom of the Instant Pot and spread the sliced red onions in an even layer on top.
  2. In a large glass measuring cup, whisk together the chicken broth, lime juice, honey, garlic, cilantro, chili powder, oregano, salt, and pepper until well combined. Pour over the pork and onions in the Instant Pot, making sure some of the juices get underneath the meat.
  3. Seal the lid and the valve of the Instant Pot. Cook on HIGH pressure for 25 minutes.*** Allow for 10 minutes of natural release (the clock should say L:10) then manually release the remaining pressure. Remove the pork from the pot and shred with two forks. Add shredded meat back into the pot with the marinade and mix well.
  4. Serve warm in charred corn tortillas with Peach Mango Salsa and lime wedges.

For the Peach Mango Salsa

  1. Dice peaches, mangos, tomatoes, and red onion into similar sized pieces.
  2. Toss with lime juice, cilantro, and salt. Add more seasonings to taste.
  3. Spoon 2 tablespoons on each taco for serving.

Notes

* If you want more of a sweet flavor than a chili or lime flavor, I recommend increasing to 4 tablespoons (1/4 cup) of honey.

** Flour tortillas will also work. If serving tacos as burritos, reduce the total amount of servings by half.

*** Allow for 15 minutes of pressurization, 25 minutes of cooking, and 10 minutes depressurization. Total time is about 50 minutes.
